10 World’s Biggest Country Producers of Caviar- According to Paper entitled “Sturgeon meat and caviar production: Global update 2017” by Paolo Bronzi, there are 10 World’s Biggest Country Producers of Caviar. Nutritionally, based on the Caviar Star, the caviar contains full of protein, calcium, iron, magnesium, phosphorus, selenium, and vitamins A, B2, B6, B12, B44, D, K and more. Caviar is also known with many nutritious natural essential amino acids such as lysine, arginine, isoleucine, methionine and histidine. In the future, the caviar production has faced some inhibition and challenge that lead to significant decline of wild sturgeon populations. Basically, legal and illegal overfishing, habitat deterioration, river fragmentation including damming and pollution are some of the reasons that makes sturgeon population has decreased gradually.

1.China
China still becomes the biggest producer of Caviar in 2016. Based on Global Production, the production of Caviar from China reached 100 tonnes. Specifically, the greater population of sturgeon in China was distributed in the Yangtze River basin, Heilongjiang River basin and the river basins in Xinjiang.
In terms of Caviar industry and its development in China, there are some popular companies in caviar production. Hangzhou Qiandaohu Xunlong Sci-Tech Co Ltd is one of the leader caviar industries in China and can produce 60 tonnes of caviar annually. Furthermore, this company has popular caviar brands “Kaluga Queen”. Basically, Kaluga Queen is used for 21 of the 26 3-starred Michelin restaurants in Paris.

Russia is the 2nd biggest producer of Caviar in 2016.
