In the fermentation process, the yeast, commonly used Saccharomyces cerevisiae, Kloeckera (Teleomorph Hanseniaspora), Candida, Brettanomyces (Teleomorph Dekkera), will consume the sugar content of the wine and convert it into ethanol and carbon dioxide. Of course, different variations of the type of grapes and yeast will produce diverse types of wine.

Commonly, there are several types of wine, namely, Red Wine, White Wine, Rose Wine, Sparkling Wine, Sweet Wine, and Fortified Wine. There are more of them because of technologies and new breakthroughs in processing systems.

Statistically, according to the FAO Statistical Corporate Database (FAOSTAT) in 2024, the world’s production of wine from time to time is relatively flat.
